Total Time: 25 minutes
- 2 tsp. olive oil
- 1/3 cup diced onion
- 2 (14.5 oz.) cans Margaret Holmes Hoppin’ John
- 1 (16 oz.) can chicken broth
- 1 cup cubed ham
- Heat oil and sauté onion for 2-3 minutes until fragrant.
- Stir in Margaret Holmes Hoppin’ John, chicken broth and ham. Turn heat to low and simmer for 20 minutes. Great with cornbread!
